Uncle John’s Oven BBQ Baby Back Ribs

Want your “Baby Back Ribs”? You can have them without the bother of heating up the outdoor grill, standing over it to make sure your ribs don’t catch on fire and ending up with dried out, tough, no-meat-left-on-the-bone ribs. You don’t have to worry about cleaning up the sticky mess left behind on the grill either. You don’t have to worry about grilling at all! The reason is you are going to BBQ your “Baby Back Ribs” in the oven. First you are going to have to forget about firing up that outdoor grill and fire up your oven instead. A temperature of 325° will do just fine. While your oven is getting to temperature, season your “Baby Back Ribs” with your favorite seasoning or you can just use plain old salt and pepper. Next make a braising liquid. Combine one 12 oz. beer (1 ½ cp. water can be substituted) with 1 ½ tsp. – 1 tbsp. liquid smoke. If you do not like the flavor of smoked meat then you can exclude the liquid smoke, however your ribs will leave something to be desired flavor wise. Pour this mixture into a large Granite Ware 18.75" x 11.25" x 2.25" open roasting pan. Add enough water so that the liquid level is approximately ¼ inch up the side of the pan. Then place your ribs into the pan meat side down. Make sure to not over load the pan. Do not stack ribs directly on top of one another, however shingling is okay if needed to fit into the pan. You should be able to fit 6 half slabs into the pan with no problem and if they are on the smaller side you may be able to fit 8 half slabs shingled. Cover tightly with aluminum foil and be sure to cinch the foil around the edges of the pan. Place the pan into your pre-heated oven on the middle rack. Set a timer for one hour. When the time rings, remove the pan from the oven, remove foil carefully (you will need it again), turn the ribs over, replace the foil, and put the pan back into the oven. Set a timer for another hour. When the timer rings, remove the ribs again, remove and keep the foil for one last use, remove the ribs from the pan and wash out the pan. Place the reserved foil (topside down) into the pan to line the bottom and sides of the pan. One at a time, place the ribs back into the pan and sauce thoroughly on both sides. Leave them uncovered and place pan back into the oven and heat trough for about 25 – 30 minutes. Serve immediately. You now have your “Baby Back Ribs”. They will be tender, juicy, and the meat should slurp right off the bones!
